The Digestive System


The digestive system is a multifaceted organ system, composed of a layered gastrointestinal (GI) tract or tube and various accessory organs that assist the GI tract in carrying out the sur- prisingly long list of functions (e.g., mechanical processing, emulsification, absorption, etc.). It is a surprisingly robust organ system that is capable of withstanding much wear and tear and an onslaught of invaders from the external environment. In a way, it is similar to the integument—exposed. It is open to the outside of the body at both ends and is therefore con- stantly exposed to the external world. It is basically one long tube well attached at each end by adventitia (connective tissue) at the mouth and anus. At entry and exit, it is lined with stratified squamous epithelium. Like the integument, it comprises several tissue layers. The two internal layers, mucosa and submucosa, are responsible for the processes of chemical digestion and absorption. The next most superficial layer, the muscularis externa, is responsi- ble for the mechanical churning and grinding of digestion and propulsion of materials along the tract. It has numerous unique features such as distensibility, high levels of chemical pro- duction (including mucus, enzymes, and emulsifiers), and regulation of passage of materials by a series of sphincters located between major regions of the GI tract that act as gatekeepers throughout. There is a lot of ground to cover here, but fortunately most students have at least some familiarity with both the process of eating and the equipment they have for processing food.
